Warm White Bean Ragout on Toast

INGREDIENTS:
White beans, 1 cup rinsed and drained
Cherry tomatoes, ½ cup sliced
White onion, 2 medium diced
Red bell pepper, 1 medium diced
Garlic, 4 cloves minced
Tomato paste, 2 teaspoons
Chicken broth, 1 1/2 cups
Parmesan, 2 tablespoons and more for garnish grated
French bread, 3 slices toasted
Basil, for garnish chiffonade
Olive oil, as needed
Salt, to taste
Pepper, to taste
4 garlic cloves, 3 finely grated, 1 halved
PROCEDURE:
Heat oil in a sauté pan.
Saute onions,
Garlic,
And red bell pepper
Until softened.
Add tomato paste
And cook until color darkens.
Add chicken broth
And simmer until liquid has reduced
And slightly thickened
Add white beans
While stirring occasionally
Add cherry tomatoes
And parmesan.
Season with salt
And pepper.
Place toast on a plate
And put ragout over the toast.
Garnish with parmesan,
Basil,
And drizzle with olive oil
