Strawberry Millefeuille

Translated to English, millefeuille (pronounced meel-foy) means one thousand sheets, layers, or leaves. It's an old-school French pastry that's airy, crispy, flaky, and decadent in all the right places. The flavors of a millefeuille are simple, but the textures are amazing.

Jenna approached her Mille Feuille baking class, bracing herself for the degree of difficulty and detail of the pastry. Under the watchful eye of her Chef Instructor Nadine, she now chuckles with the seriousness of the process, that coming up with the perfect outcome required “praying hard”.


“Did you know that this 4 by 1.5 inch dish is made up of 8 components (Blitz Puff Pastry, Joconde, Pastry Cream [for diplomat cream], Diplomat Cream, Creme Anglaise, Raspberry Coulis, Chocolate for Swirls and Spirals and Strawberries)? Every component is challenging and meticulous to make and each layer is inspected by our chef instructor. And we have to do and compress it all in a given amount of time and pray hard that the dish set on our plates.


Unlike the previous lab exams in which we work in groups, in compre we have to work on our own so planning ahead of time is very critical. We learned to be more efficient as we move on to each level - to do some things simultaneously to save time. An attentive ear during briefing, trust in our own capabilities, and prayer really helped a lot.”
