Although a neophyte in baking, Evounne Joy Tee approached her Lemon Meringue Tart-making class with both enthusiasm and eagerness. Just like the dish she learned to make, her switch from the corporate world to baking had its tart beginnings. “Before I enrolled in Global Academy, I did not have any experience or knowledge about piping icing for tarts or even cakes. I had fears of not being able to dress them. I am not artistic and I do not have finesse when it comes to baking.”
However, Evounne was prodded out of her lack of confidence with the help of her Chef Instructor, and from then on her heart was set on her newfound adventure. “The most challenging part of creating the tart was the piping of the meringue”, she relates, “but while doing this dish, with the help of my Chef Instructor, I realized that I can do it! Not only did my instructor teach me how to bake but he empowered me and equipped me to be a professional Chef. Global Academy helped me realize that I had the skills and can improve them. That every dish I make is a revelation of my achievement.
In a month’s time, I will be finishing my training and I proudly say that I am ready to step out of the four corners of our classroom and school. I am honored to be mentored by world class chefs. I will always be a proud Globalista.”
