Simple corn chowder made with sweet, fresh corn, onion, carrot, celery, potatoes and milk. This is a crowd-pleasing chowder that’s perfect for entertaining on cool december weather and would make a great addition to your family get togethers.

INGREDIENTS:
Chicken broth, 2 cups
Milk, 1 cup
Heavy cream, ½ cup
Corn kernels, 1 cup
White onion, 1 medium diced
Carrot, 1/3 cup diced
Celery, ¼ cup sliced
Potatoes, 3 medium peeled and diced
Canola oil, as needed
Salt, to taste
Pepper, to taste
Cayenne pepper, to taste
Spring onions, for garnish sliced
PROCEDURE:
Put broth,
milk,
and cream in a pot.
Bring to a boil then reduce heat to a simmer.
Set aside.
Heat oil in anoter pot over medium heat
Sauté onions,
Carrots,
And celery
Until soft.
Add potatoes
And corn kernels.
Season with salt
Pepper,
And cayenne.
Pour stock in the pot.
Bring to a boil then reduce to a simmer.
Cook until potatoes are tender.
Garnish with spring onions.
