In the Global Chefs Challenge Finals, the best chefs in the world (Professional Category) aged 26 and up compete to show their skills, and to prove how adaptable they are in the day-to- day challenges of running a kitchen.
Their culinary creations must follow guidelines such as being appetizing and tasteful, while also showing off exemplary plating for ease of service.*
This is the criteria in which Global Academy’s Faculty and Programs Director Chef Gerd Gendrano faced up to during this year’s Asian semi-finals for Global Chefs Challenge. For this passionate and world-class-experienced chef, the definition and interpretation of this benchmark put to play his years and years of significant experiences.

“It was my first time to attend the TUCC in Bangkok, Thailand. There were expected challenges in logistics and gathering of ingredients, a constant in out-of-the-country competitions. All my competitions here and abroad, and most recently the one in Singapore in 2012 and 2016, have taught me to be prepared for anything”, the Courage Awardee states.
His choice of dish for this competition remains rooted on his constant inspiration behind its creation – the ingredient itself.
“As always, I want the main ingredient to shine. For the appetizer,I worked with high quality-salmon and paired it with fresh local Mud Crabs, which complemented each other bridged with Dilmah Chamomile Tea and Fruits.
For the main course, veal, I wanted to add a rich "beef" flavour to the main ingredient veal to lift its delicate flavor. I crusted the veal with Bone Marrow and Pommery mustard.” This masterpiece garnered a high gold-first runner up medal!
“Filipino chefs have immense raw talents that need to be honed. These national treasures of ours need to be exposed to the international culinary scene, and should be given constant opportunities to represent the country in competitions. My victory once again proves that our local chefs can compete with the best in Asia and in the world. Although we have had our share of similar victories in the past, it is my dream that this recent victory would spark more support for the next generation of competitors.”
