Orange Blossom Honey- Glazed U.S. Maple Leaf Duck Breast with Apricot and Basil Stuffing, Port Wine Reduction, Squash Purée, Sautéed Brussels Sprouts and Mushrooms, Foie Gras, Duck Confit and Mushroom Tortellini, Lemon and Pistachio Couscous
which won the Highest Gold in the US Poultry Category, was the cover of the PCC 2018 Rule Book. On that same PCC year, Chef Gerhard won the PCC 2017 Best Chef Award and Global Academy won it’s 3rd Overall Championship.
An encouraging tribute to hardwork, and to Global Academy’s insistence on excellence through dedication to the craft. Thank you Philippine Culinary Cup!
