Spring Cafe
In Global Academy’s Cáfe Operations Simulation entitled “Spring Cáfe”, the smells, colors, and delights of the charming season come to life! Baking and Pastry Arts Batches 57 and 58 students created both sweet and savory delicacies under the guidance of Chef Instructors Joan Leslie “Anjo” dela Cruz and Cat Go.
“Chef Cat and I are Baking and Pastry instructors,” Chef Anjo shares, “and Global Academy’s culinary instructors helped us through the culinary part. The harmony between colleagues from two disciplines and students from two different batches were evident in the dishes which complemented each other. I was happy to see our students’ learnings manifest in the techniques and teamwork they displayed during this simulation. ”
Chef Cat adds, “We are proud of our students who arose from the challenging kitchen and operations situations with grace and patience. With an ambitious line-up of dishes, it wasn’t a walk in the park at springtime! Yet, patience and dedication to delicious pulled them through. The dishes complemented each other beautifully!!”
Not without a spectacular surprise, Spring Cáfe featured an interactive and sensory experience. From a mock chocolate campfire, guests chose from a spread of desserts and mignardise and poured hot chocolate into smoked glasses.
