Superior Diploma in International Cuisines (SDIC) Batch 6 proudly present their creations during their Restaurant Simulation entitled “Shokuryo Senso”!
“The challenge was to create and interpret an innovative menu showcasing Japanese ingredients using the techniques they learned within their in-house training.”, Chef Cez says, “Each specific ingredient was to be elevated and served in a refined and thoughtful manner.
With the students being in the forefront of the activity, they had the opportunity to practice organizational and leadership skills.This led them to realize that being a cook goes beyond cooking. They were also exposed to situations which required quick decision-making with no compromise to high quality, safety in food handling, and proper sanitation.”
Chef Ching shares, “Like in all simulations, confidence in cooking and working in the kitchen were just some of the achievements that the students reached.. They became stronger leaders as they were all hands-on with all aspects of the event - menu conceptualization, requisition, pre-production, and service.”
And the fruits of these are seen in the spectacular Modern Japanese dishes they created!
