The bounty of the soil, the richness of the mountains, and the meticulous hunt for the best and finest came together in another adventurous Global Academy restaurant simulation! Skadi, a goddess in Norse mythology associated with bowhunting, winter, and mountains, was the theme of the menu.


SKADI was executed by the Professional Culinary Arts (DPCA) Batches 63 and 64 students, mentored by Chef Instructors Francis Buhay and Ching Calderon. From menu planning to execution to actual service, one can say SKADI brought the beast out of these enthusiastic young culinarians-in-training. Minds were restless from excitement in anticipation of the kitchen buzz and the scrumptious results thereafter.


And so the happy chaos began. Even if the students took a while to get the hang of things hands-on, they were using the sous vide machine, making roulades, pickling vegetables, and making espuma soon after. They grilled, sauteed, pan-fried, seared, and deep-fried until they achieved the high quality that their world-class training required.


Not without curve balls, SKADI pulled through with resourcefulness and continuous encouragement from the students’ mentors and from each other. “There were students who unexpectedly stepped up to challenges. I did assign the right sous chefs during the simulation. They were very efficient and knew how to lead their team in the kitchen.”, Chef Francis affirms.
