Le Gourmand Cafe Operations Simulations: DPCA-61, Evening DBPA-40 (under Chef Gio and Chef Melanie)

Global Academy’s restaurant simulations give the full experience, bringing students as close as possible to the hecticism, the adrenaline pump, the detailed attention to high quality of output, and the clockwork-teamwork that makes a dining service successful.
This brunch simulation for example, got the team reporting for duty at 3:00 am. “It was a challenge to bring ourselves to meet for three days before the crack of dawn but it was a good problem to have”, as Chef Gio describes the red-eye moments. Overall, the simulation brought out the innate talents and applied learnings of all the students who manned the kitchen and the front of the house.
The chef instructors share, “The class managed to work well together without any major hiccups. Considering that this was a merged simulation, with two different classes organizing it, it was a challenge they succeeded in.
I witnessed a lot of my pastry students step up and organize themselves well. I would like to believe my team was a well-oiled machine, and each day was very efficient and productive for us. I am also especially proud of the fact that a lot of the students from my baking class are fresh off K-12 (meaning they are relatively young), yet they managed to bear the responsibilities and rise to the occasion. They all managed to bring out good food and that was very important.”
