La Derniere: DPCA 69 & DBPA 42 under Chef Jeremiah Go and Chef Cecille Bundoc

“The last but definitely not the least”, this phrase perfectly sums up the successful simulation of restaurant kitchen and front-of-the-house operations held at Global Academy Alabang last May 09. Entitled “La Dernière”, a French phrase that translates to “The Last”, is an event executed by the teamwork of Batch-69 Diploma in Professional Culinary Arts and of Batch-42 Diploma/Certificate in Professional Baking & Pastry Arts. This event also celebrated the last simulation of Chef Jeremiah Go with the Global Academy family. Joining him at the helm of this momentous event is Chef Cecille Estolano.

As any preparation and creation of an event, curveballs and challenges were met along the way. “Getting both the classes' approval for the menu design, apron, centerpiece, budget, etc.,” shares Chef Jeremiah, “were just some of the obstacles that the team faced. Though with perseverance, passion, and teamwork, the simulation was a success as evident in the beautiful dishes created by the students. Chef Cecille adds, “The students have a good sense of teamwork and camaraderie. They exhibited exemplary behavior, with mature and professional responses to challenging situations - a testament to the students' skills and Chef Miah's (and the rest of their instructors') dedication to the craft.”
