International Internship of Rice Dulguine

This diamond-in-the-rough is fast becoming polished into the precious gem she trained to be. A Global Academy graduate of the Grand Diploma in Professional Culinary, Baking and Pastry Arts, Rice Dulguime learned the principles and techniques of both culinary and baking disciplines. “My course has helped me be versatile in the professional kitchen, and I adapted this training in my internship”, Rice shares.

After graduation, Rice interned at the Bake Shop at Terranea in Los Angeles, California. She relates, “In my first 6 months at Terranea , I was able to showcase my skills in creating new desserts. Some tasks required me to decorate celebration and wedding cakes as well. Whenever I do, I always put to heart the skills I learned from Global Academy, those that helped me garner the Silver Medal in the Philippine Culinary Cup 2017’s Dress The Cake category.

Being exposed and trained in the Academy in both culinary and baking principles came to play when halfway through my internship, I was transferred to the resort’s fine dining restaurant, Mar’Sel. Here I realized that if you want to be a well-rounded cook, you must push yourself to be better everyday, to compete with none other than yourself, and to understand that being in the culinary world is a never-ending learning process.

Working in Terranea has given me the opportunity to create new dishes and desserts, explore ingredients that seemed foreign to me at first, be friends with people from different cultures, and to be trained even more in the professional kitchen. My mantra is to always be better than my previous experiences.

I am grateful to Global Academy for allowing me get my foot wet onto to the first steps of becoming a professional cook through this internship!”
