Global Academy alumnus, Mav Javier, bagged 2 gold medals and 5 bronzes in the just recently concluded 9th Philippine Culinary Cup.

Congratulations, Mav! Your Global Academy family is proud of you!


Winning 5 bronze and 2 gold medals was no easy feat. Ask any competitor in the Philippine Culinary Cup and they would attest to the amount of physical, emotional, and mental stress they have to go through just to put out one good, decent plate to a panel of seasoned chefs. But I guess, given my condition, mine was extra difficult.
Perhaps it’s easier to win when you have been in the industry for quite some time already. I’ve been working in a professional kitchen for just a little over two years. And more than half of that time is not actually spent cooking on the line. At first, I just wanted to look for validation that I can do “it”. But as the weeks progressed, I decided to challenge myself by joining 8 categories. (I got carried away, huh?) Can I still cook quality food? What will my chef instructors say? Can I lead a brigade? Will I win? It’s excruciating when your own brain is your number nemesis. It always felt like there’s a demon over my shoulder discouraging me from getting good, making me doubt my every move. I simply can’t help overthinking.
But I kept pushing. I did research in the early mornings, practice in the entire day, then research again when I got home till the wee hours in the morning. When there are chemical imbalances in your brain, you tend to doubt everything no matter how good they seem to be. I even made changes in my recipes the night before the competition. Yet, one of the things I learned in this journey is that life gets better. Nothing worth having ever came easy.
I thank God for giving me the strength to go on every single day; for raising me up during the many times when I so badly just want to hang my apron. At some point I lost faith in everything. But He carried me.
My boss has been supportive of me. Even if at times when I feel like he disagreed with what I want to put out on the plate, he still belived in me. So I thank you, Mr. David Sison, for letting me carry the name of Mama Lou’s Group. I hope through this small feat, I have brought pride and honor to our company.
To my Global Academy family, you made me a better cook. This all started with our run 3 years ago, Chef Gigi. Seeing my chef instructors (ChefsCho and Cecille), Ms. Anna, Chef Benny, and the rest of the Globalistas cheer for me was a huge encouragement. The PRICE values have been etched here 👉🏼❤️ since day 1. Thank you very much!
To my friends who cheered on, prayed for, wished for good luck, and actually spent time to come and see us, maraming salamat! Hang out soon?
To all judges, especially to Chefs J BrandoGerhard and Mike, thank you for generously sharing your expertise and knowledge. That’s priceless!
And to my family and loved ones, you have always been supportive of my endeavors. I can’t thank you enough! I hope I made you proud. This is for my parents, who have worked their entire lives to give us a better life. I love you. This is also for my siblings; I hope that as the eldest, I have been a good example to you both.
This is proof that when you put your mind into something, with faith and hardship, you can definitely achieve it. Let not your condition, situation, nor failures hinder you from becoming better. Keep pushing. Strive harder. Believe that you can.
