Meet Chef GeeCue, as he is fondly called by colleagues and friends, a Physical Therapy graduate and Global Academy mainstay. This multi-awarded culinarian has been garnering recognition from his culinary school days to his present stay at the Academy, proving that this therapist is indeed a chef-at-heart.

He did the rounds of the industry, being part of the opening teams of distinguished kitchens like those of Restaurant Cicou and St. Luke’s Medical Center in Global City. Fresh from his background and industry experience, Chef GeeCue didn’t feel apt to be a chef instructor.

“I had no background in teaching and the academe. When my former culinary arts instructors Chef Brando Santos and Chef Mike Yap contacted me to ask if I was interested in being a Chef Instructor at Global Academy, my initial response was coupled with laughter (a nervous one) – ‘Ano naman ituturo ko dun Chef?’ After a training period and lots of gained confidence, I joined the roster in 2012.”

One of the quotes that Chef GeeCue lives by is one of John Cotton Dana – “Who dares to teach must never cease to learn” – and this openness was his pair of wings to glide through his career at Global. The challenges of his adjustment period were laced with hopefulness, as Global Academy provided the newbie instructor with “all the necessary training, shadowing, teaching materials, training, and information I needed to prepare me to be able to handle my own classes.” Two years after, he was offered the headship of the Pasig campus. “The added responsibility challenged my managerial and organizational skills. This time, it’s not just lesson plan-making and teaching, it involves the overall health of Global Pasig. I found myself being a teacher, overseer, financial police, disciplinarian, tatay, and ambassador of our institution.”


“With almost seven years in Global Academy I have had students with ages ranging from 17 to 60 plus years old, who are not certain why they enrolled nor what their goals are. I draw my greatest achievement in them, in the mentorship of helping them discover their life purpose. And the rewards are full! Graduates come back to thank us, saying that the life lessons and skills they learned from us are propelling them towards their dreams, newfound or otherwise.”
