CHEF EDWARD BUGIA
Executive Chef and Co-Owner Mimi and Bros, Pino Group of Restaurants, Bean and Yolk
Chef Ed was a Chef Instructor in Global Academy 10 years ago and he vividly remembers the quality of students and graduates that it produced. This is probably one strong reason why he welcomes the Academy’s interns into his restaurants without hesitation. “It’s really the discipline and values that Global instills - that has become a tradition. Since I last taught in Global, these values have remained the same.”
As expected in all restaurants that consider trainees into their highly-valued establishments, it gives a keen eye not only on skills but on character as well. “No one is spoiled. Everyone is very clean and organized. No one complains. They are hungry to learn”, Chef Ed proudly says.
As to whether Global Academy interns will be valuable assets to their future companies of employment, Chef Ed has this to say – “There is a championship pedigree and mindset in these students/alumni and any establishment should feel comfortable having them as part of their teams.”
