Cafe Guijo

Two complementing talents teamed together once again for Cafe Guijo, a cafe operations simulation by Global Academy’s Diploma in Professional Culinary Arts (DPCA) Batch 117 and Diploma in Professional Baking and Pastry Arts (DPBA) Batch 59 students. “Guijo”, a kind of hardwood that’s strong as steel, was also a name coined by the students combining its Instructors Chef Gigi Almeda and Chef Joan “Anjo” Leslie dela Cruz. Leading the baking students was Chef Cho Marcelino.


Both basic and advanced techniques were utilized in the creation of the dishes for this simulation, and the basic challenge, according to Chef Anjo, was to execute unfamiliar recipes and desserts using basic techniques. The other challenge was to mass produce these creations. Chef Anjo continues, “The third challenge was to pull-off a 10-item dessert spread. The menu was ambitious and required glitchless planning such that all fares were served while maintaining high quality.”


Chef Cho credits the flawless flow of the activity to his colleague. “The training they received from her (Chef Anjo) was apparent. The students’ preparation for this event began on Day 1 Level 1. Without the foundation of skills and proper attitude during their four training levels, I do not think this simulation would have been as smooth and stress-free as it had been.” Chef Anjo has this to say about Chef Cho, “He stepped up while I was on leave during the simulations prep period. Taking the lead as Pastry Chef, he was able to share his expertise in mass production (advance prep, proper storage of items, time management, etc) with the students.”
