Day 1 of Germany vs Mexico Restaurant Wars
It’s Germany vs Mexico in Global Academy’s Resto Wars!
Dubbed “Wirsthaus vs El Jefe”, this restaurant simulation was performed by the Superior Diploma in International Cuisines (SDIC) Batch 8 students and mentored by Chefs Gigi Almeda and Anjo dela Cruz. Here, the signature art of German and Mexican cuisines were executed using diverse cooking techniques which the students were trained for.
Day One - Germany!
Chef Gigi reveals some of the challenges in the activity. “Months of research and development were required to pull-off the German cuisines. Making mustard and fermenting cabbage for sauerkraut for instance, involved a lot of trial and error.
According to Chef Anjo, hard work was one of the keys to the success of Wirsthaus vs El Jefe. “The students worked hard to get the dishes right, especially in the execution of the unfamiliar German cuisine.
The result is an impressive array of dishes true to the German cuisine bastions - sausages and sauerkraut.
“Their efforts paid off. Their food came out great and service was smooth.” Chef Gigi adds, “Communication was a big factor. Making sure sous chefs were on top of things and the constant updates reported to me were of big help. A lot also stepped up in the kitchen - an unexpectedly great thing for me to witness.” Chef Anjo proudly ends.
