Piccoli Part 2
Three batches of Baking and Pastry arts students merged talents and acquired skills for this Café Ops Simulation in Global Academy. Piccoli, which is French for Little Spoon, was a spectacular showcase of exemplary teamwork.
Chef Instructor Gio Mangaya-ay shares, “At first it was challenging to conceptualize the menu because we were not paired up with a culinary instructor. But Chef Nadine (Madrigal) and I played to our strengths and managed to put together a menu that reflected our sensibilities. The delegation of tasks was communicated properly from the sous chefs down to the line. The savory food was executed well, under the guidance of Chef Joi So. The pastry production exceeded our expectations.”
