When Les Toques Blanches, Philippines commissioned Global Academy to seek its best to represent the country in a prestigious international competition, Faye’s glaring talent was top of mind among her chef instructor-mentors. To a surprised but eager “Yes, chef!”, the young hopeful embarked on her first-time journey.
“I really didn't know how to prepare myself for this because I haven’t participated in any competition. Things fell into perspective however, with my mentors game-changing encouragement – ‘Hindi ibibigay sayo yan kung hindi mo kaya. ‘ It was then that I started to believe in myself, while realizing that this competition will help me move out of my comfort zone.
I am very grateful to have been chosen to represent our country in the Global Young Chef Challenge Semi-Finals. To ease me on during our frenzied practices, I conditioned myself into thinking that I was to participate in a simple competition among those of my age group. When competition day quickly approached, the anxiety of the reality set in – I was to represent not just Global Academy and the LTB Philippine Chefs’ Association, I was going to embody my beloved country and expose its young talent to the rest of Asia!”
Off the first-time competitor went to Bangkok, Thailand, with her co-Philippine representatives and her team support. At this point, all Faye could pray is for God to be with her all the way, that her preparations pay off, and that she be at her best.
“There are no words to explain what I was feeling on competition day. I had mixed emotions. I kept in mind what my mentor, Chef Mike Yap, said - ‘Focus and make this your best run ever’ – and this became my focus. During my heat all of the mistakes I made during our practices were corrected!
Faye owes the following aspects to her win.
“ Sanitation, organization of my station and mise en place, and correct seasoning. These are strictly implemented in my Global Academy educational training. Cleanliness, organization, and quality of output are staple to our everydays at the Academy.”
There is good reason to look forward to brighter and more successful things to come in this competition neophyte who bested many Asian peers for the first-runner up gold!
