This economist’s passion for the culinary arts was awakened during his travels to Australia and New Zealand and he never looked back since. His epiphany led him to achieve local and international culinary degrees, and the momentum was sustained by running two restaurants in Pasig and Quezon City.
Henceafter, Global Academy has been blessed with the fruits of Chef Vic’s love for food and everything that goes with it. The Academy and its students now benefit from this culinary professional’s chops which he gained with a combination of academic disciplines and industry experience.
Chef Vic relates his daily challenges as the main man in the Academy’s newly-launched Cavite branch. “As overseer of daily operations of the latest GA branch located in Dasmariñas City, Cavite, new challenges have to be hurdled. To name a few - training of new employees, procurement of tools and equipment, facility maintenance, and community relations.” Despite his hectic grind, Chef Vic maintains joy in mentoring.
“The most significant achievement of a chef instructor is seeing his students blossom from a promising bud to a lovely flower. To guide a person in achieving his dream is the goal of every dedicated mentor. I believe I have been instrumental in helping pave the way to the success of my committed students in their hand-picked career.”
Chef Vic considers the outcome of his former students, as feathers on his cap. “Quite a number of my former students are now devoted chef instructors themselves, or have become successful hotel or restaurant chefs here in the Philippines and abroad, or have lucrative home-based food businesses.” Surely, there is a clear horizon for all who will experience this dedicated mentor’s training and guidance.
