Head Chef, Global Academy Alabang
After her internship in the year 2005, the young culinarian set foot in hotel and food established and moved to become a long-time hotelier at the Mandarin Hotel, Manila. Today she heads Global Academy Alabang.
Her headship involves educating and providing academic assistance in a variety of learning situations, be it in demos or laboratory activities at all levels of the Baking and Culinary program. Chef Cez also documents students’ progress.
“It's my greatest joy to see students do their internship and work for renowned companies here and abroad, and actually excel at it. I'm also filled with so much pride that our students who are women are breaking barriers that we (as women) usually encounter in the restaurant industry.” Chef Cez has this encouragement for future kitchen workers and food entrepreneurs - “Be kind, be humble.
